The Protected Designation of Origin Priego de Córdoba is an accredited certifying body by the National Accreditation Entity (ENAC), which reinforces its technical competence as well as the commitment between its Regulatory Council and all associated companies to apply a strict international quality control system to the sector.
Through its Regulatory Council’s Control Body, the PDO Priego de Córdoba guarantees and protects the production process, the quality, and the origin of extra virgin olive oils within the geographical region it covers. This includes the municipalities of Almedinilla, Carcabuey, Fuente Tójar, and Priego de Córdoba, located in the southeast of Córdoba, within the heart of the Sierras Subbéticas Natural Park.
The harvest begins between the first and second week of October and, depending on the olive variety, can extend into March or April. One thing never changes: the fruit must always be harvested at optimal quality and ripeness.
As for preservation, stainless steel tanks with controlled temperature are used. The goal? To avoid oxidation and exposure to light and oxygen—factors that could diminish the organoleptic properties of extra virgin olive oil.
Likewise, in general terms, consumers should know that products with a Protected Designation of Origin (PDO) “are those whose quality or characteristics are due to their geographical environment, including natural and human factors, and whose production, transformation, and processing always take place within that defined geographical area from which they take their name,” according to the Government of Spain.
Another main function of the PDO Priego de Córdoba is to safeguard and protect the Picual, Hojiblanca, and the region’s most native variety, Picuda.
As a guardian of the gastronomic heritage and traditional expertise, it supports traditional farming, which means that most harvesting tasks are done manually to protect the centuries-old olive groves and their precious fruit.
Ultimately, a protected product offers consumers a guarantee of quality and safety. Beyond that, EVOOs carrying its seal are presumed to have the unique personality provided by the land, impeccable traceability, and a production, processing, and packaging process carried out entirely within the protected geographical area.
