Parqueoliva Sweet Quince Vinegar is a singular vinegar, crafted from the Common or Zagrilla Quince variety, native to the Sierras of the Subbética in Córdoba. Coming from small traditional orchards, it is obtained from quince juice harvested in mid-October. This vinegar does not undergo aging processes, which allows it to preserve all the fruit’s natural aromas and flavors, with notes of compote, dried fruits, and white flowers. On the palate, it stands out for its balanced, smooth taste with sweet-and-sour tones, ideal for creative pairings and delicate dishes.

PROCESS DESCRIPTION

Reception of the quinces, cleaning and washing for subsequent milling. Kneading of the resulting mass and separation of the quince juice. Finally, storage in tanks for fermentation, bottling, distribution, and sale.
