PROCESS DESCRIPTION
Reception of the olives, cleaning, washing, and weighing, followed by milling within less than 1 hour of reception. Kneading of the paste and extraction of the extra virgin olive oil through centrifugation. Finally, the resulting oil is filtered and stored in inerted tanks until bottling.
