PROCESS DESCRIPTION
Reception of the olives, cleaning, washing, and weighing, followed by milling in less than 1 hour after reception. Kneading of the paste and extraction of the extra virgin olive oil through centrifugation. Finally, the resulting extra virgin olive oil is filtered and stored in inert tanks until bottling.
