Rincón de la Subbética is an organic extra virgin olive oil, made exclusively from Hojiblanca olives, harvested in the first days of the season. Born in the heart of the Sierras Subbéticas Natural Park, this EVOO has been awarded year after year as the best organic oil in the world. It stands out for its very intense green fruitiness and great aromatic complexity, with herbal and citrus nuances, and notes of thyme, mint, and tomato plant. On the palate it is sweet on entry, with medium-intensity bitterness and spiciness, perfectly balanced and persistent. A true masterpiece for the most demanding palates.

Process and Storage Details

Production Process: Reception of the olives, cleaning, washing, and weighing for milling in less than 1 hour from reception. Kneading of the paste and extraction of the oil through centrifugation, followed by filtration and subsequent storage in inertized tanks until bottling.

Storage and Preservation: Keep protected from light, in a cool and dry place.

Best Before: 18 months from the bottling date (see label).

Olfactory Phase

Very intense green fruitiness. A multitude of nuances reveal its great complexity. Fruity and citrus reminiscences. Herbal sensations of thyme and mint. Vegetable notes such as tomato plant.

Gustatory Phase

On the palate, sweet at the start, green almond, medium-intensity bitterness and spiciness. A perfectly structured oil, long, persistent, and impossible to leave the taster indifferent. It is a balanced, complex, and harmonious oil.

Pairings

Ideal for raw consumption with toast, bruschetta, and gourmet dishes, mixed and tomato salads, meats, and oily fish.
