Almazaras de la Subbética D.O.P. Priego de Córdoba, formerly Almaoliva Gran Selección, is an extra virgin olive oil with a medium fruity profile, perfect for both raw use and cooking. Made from a balanced combination of Picuda, Picual, and Hojiblanca olives, this AOVE stands out for its smoothness on the palate, with a sweet entry and subtle hints of bitterness and spiciness, accompanied by sensations reminiscent of apple. Its versatility makes it an excellent choice for restaurants, gourmet frying, and everyday recipes.

Process and Storage Details

Production Process: Reception of the olives, cleaning, washing, and weighing, followed by crushing within less than 1 hour from reception. The paste is then mixed, and Extra Virgin Olive Oil is obtained through centrifugation. Finally, the resulting extra virgin olive oil is filtered and stored in inertized tanks for later bottling.

Storage and Preservation: Store protected from light, in a cool and dry environment.

Best Before: 18 months from the bottling date (see label).

Olfactory Phase

Medium/high fruitiness with green and ripe nuances.

Gustatory Phase
