PROCESS DESCRIPTION
Reception of the olives, cleaning, washing, and weighing, followed by milling within less than 24 hours of harvesting. Kneading of the obtained paste and two-phase separation of the olive juice from the other components. Finally, the resulting extra virgin olive oil is filtered and stored in inerted tanks until bottling, distribution, and sale.
