It is a coupage of Picudo, Picual, and Hojiblanca, with a sensory profile that combines green and ripe notes. On the palate, it offers a sweet touch at the beginning, followed by green almond, bitterness, and spiciness of medium-high intensity. Its balance and harmony make it a perfect EVOO to enjoy raw in salads, meats, blue fish, and gourmet toasts.

Process and Storage Details
Production Process: Reception of the olives, cleaning, washing, and weighing, followed by milling within less than 24 hours after harvest. Kneading of the obtained paste and two-phase separation of the olive juice from the other components. Finally, the resulting extra virgin olive oil is filtered and stored in inerted tanks, ready for later bottling, distribution, and sale.
Storage and Preservation: Keep protected from light, in a cool and dry place.
Best Before: 18 months from the bottling date (see label).

Medium/high fruitiness, presenting green and ripe notes. This leads to a perfect harmony of all nuances.
