And when it ends, <\/span>different kinds of work begin, aimed at keeping the olive grove in <\/span>optimal condition to face the next harvest and ensuring that the EVOOs from <\/span>Almazaras de la<\/span> Subb\u00e9tica<\/span><\/a> maintain the level of excellence that has earned them <\/span>numerous <\/span>awards<\/span><\/a> both within and beyond our borders.<\/span><\/p>\n

Our farmers, more than 7,800 families, carry out quiet, relentless work <\/span>to produce <\/span>the best oil that springs from the Subb\u00e9tica<\/a>.<\/span><\/p>\n

While the cold settles over the countryside, with frosty dawns, it is their expert hands<\/span> that take on the pruning work to balance the olive tree, make it easier for <\/span>light and air to enter the grove, regulate production, and keep it healthy.<\/span><\/p>\n

Knowledge, born of experience and gained in the field, is passed down from<\/span> generation to generation.
