It is part of our culinary imagination and deeply rooted gastronomic tradition.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">That\u2019s why it\u2019s not surprising that more and more studies are proving the multiple <\/span><b>health benefits<\/b><span style=\"font-weight: 400;\"> of olive juice for the body. Ultimately, consuming EVOO is not a luxury but a commitment to health through nutrition.<\/span><\/p>\n<p><b><a href=\"https:\/\/rafaelmorenorojas.es\/\">Rafael Moreno Rojas<\/a>,<\/b><span style=\"font-weight: 400;\"> Professor of Nutrition in the Department of Bromatology and Food Technology at the University of C\u00f3rdoba and Director of the Mediterranean Gastronomy Chair, highlights that \u201cunlike other oils, since it is not refined but truly natural, it retains its full anti-inflammatory capacity.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">He also points out that \u201cit\u2019s better to <\/span><a href=\"https:\/\/rafaelmorenorojas.es\/fritura-saludable-2\/\"><span style=\"font-weight: 400;\">fry with EVOO<\/span><\/a><span style=\"font-weight: 400;\"> than with other seed-extracted oils such as sunflower oil, because its smoke point \u2014that is, the temperature at which the oil begins to degrade\u2014 is much higher. It also degrades more slowly during successive frying processes.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Thus, olive oil offers <\/span><a href=\"https:\/\/almazarasdelasubbetica.com\/en\/extra-virgin-olive-oil-for-frying\/\"><b>excellent resistance and thermal stability<\/b><\/a><span style=\"font-weight: 400;\">. Its smoke point ranges between 190\u00b0 and 210\u00b0, while that of sunflower oil is reached between 160\u00b0 and 180\u00b0. Beyond these figures, toxic compounds such as acrylamides and aldehydes start to form.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">However, Moreno Rojas warns that \u201cthe ideal frying point for EVOO is between 170\u00b0 and 180\u00b0, as above that temperature it begins to lose polyphenols and natural antioxidants.\u201d<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Of course! Although we\u2019re talking about a fat, it\u2019s worth clarifying that, in this case, its consumption actually helps maintain a healthy weight. When frying with extra virgin olive oil, foods absorb less oil than when using other types. There are two main reasons for this: the higher density and stability of EVOO.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">In addition, it objectively <\/span><b>enhances the flavor of foods,<\/b><span style=\"font-weight: 400;\"> both hot and cold, thanks to its palatability \u2014in other words, its ability to be especially pleasant to the palate.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Ultimately, the organoleptic attributes of olive oil (color, aroma, texture, and flavor) encourage its consumption raw, combined with all kinds of vegetables, legumes,<\/span><\/p>\n<p><span style=\"font-weight: 400;\">meats, or low-calorie fish, which are especially recommended for diets aimed at weight loss.<\/span><\/p>\n<p><b>Source of eternal youth<\/b><\/p>\n<p><span style=\"font-weight: 400;\">The list of <\/span><span style=\"font-weight: 400;\"><a href=\"https:\/\/cgastromed.org\/aove-sin-mezclar\">bioactive properties<\/a><\/span><span style=\"font-weight: 400;\"> potentially beneficial to health in EVOO is more than extensive. The aptly named \u201cliquid gold\u201d is characterized by a high content of <\/span><b>monounsaturated fats,<\/b><span style=\"font-weight: 400;\"> which have a double bond in their structure, making them liquid at room temperature. \u201cThe one present in the highest proportion is <\/span><b>oleic acid,<\/b><span style=\"font-weight: 400;\"> which makes up between 65% and 83% of its total composition. It helps reduce the risk of cardiovascular diseases and, consequently, mortality. It is also a powerful ally in lowering the so-called \u2018bad cholesterol (LDL),\u2019\u201d explains the Professor from the University of C\u00f3rdoba.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Furthermore, the presence of <\/span><b>polyphenols<\/b><span style=\"font-weight: 400;\"> among its minor components helps reduce oxidative stress, lowers the risk of neurodegenerative diseases and cancer, and regulates the proliferation of inflammation-related genes. They are also highly beneficial for maintaining <\/span><b>a healthy gut microbiota,<\/b><span style=\"font-weight: 400;\"> since polyphenols act as natural prebiotics that promote the growth of beneficial bacteria and keep pathogens at bay.<\/span><\/p>\n<p><span style=\"font-weight: 400;\"><b>Vitamin E<\/b> is also very present in extra virgin olive oil. But what does it provide to the body? It has strong <\/span><b>antioxidant and anti-inflammatory properties<\/b><span style=\"font-weight: 400;\"> and is associated with a lower risk of hyperglycemia and diabetes.
